Maybe you have considered going vegan once before, but you struggle with giving up dairy, meat, or even just finding the right foods to eat and feel well on a vegan diet. Maybe you have never had any interest and you’re reading this just because you’re incredibly bored. Either way, I want to share with you what you can do to eat healthy and feel fully satisfied on a vegan lifestyle! Join my journey with me!!
I’m not a super fit person who knows ALL about health and exercise…. YET. I am determined to become that person though!! I am learning a TON on this journey. I am reading more then I ever have and so I thought I would share with you guys what I am doing based off of these books and websites which I will include on my blog eventually.
Here is an example of my cooked food days!
Breakfast: This morning I woke up and had one of my favorite smoothies!
- 2 cups of orange juice
- 1 cup of spinach
- 1 bunch of romaine lettuce
- 2 celery stalks
- the juice of one lemon
So good! Really good for drinking after a day of maybe not eating the best foods. (cleans out your colon) On any other day I would stick to fruit! Fruit is the BEST food you could have for breakfast. I will juice a whole Pineapple… I’m obsessed with that right now. If you find it really difficult to do just fruit in the morning go for some whole grain toast with some fresh guacamole! Or check out Engine 2 diet website. Engine2diet.com. He has some great ideas for breakfast, lunch, and dinner! Everyone should watch the documentary on Netflix Engine 2 as well!
Lunch: A big salad is always a great choice! I love a huge kale salad with all my favorite raw veggies with guacamole and lemon juice dressing. Hate salads? Have a sandwich on whole grain bread with a small salad, or a vegan burger with whole grain burger buns. You can find those at HEB. They have great options, or some potatoes.YES, I said potatoes. Stop being afraid of carbs! They are SO GOOD FOR YOU! We can agree to disagree but I am living proof you don’t gain weight with my TEN pound weight loss since beginning this… CARB UP! Just eat good carbs.
Dinner: Tonight I am having Macaroni and NOT cheese. lol It’s an engine 2 recipe and I can’t wait. Last night I had brown rice with LOTS of veggies then I popped my own popcorn and added sea salt. Hey if you want that glass of wine with dinner. Go for it! Get some organic red wine without any sulfites. Remember though getting rid of alcohol is never a negative choice but if you need one don’t feel guilty about it!
YOU CAN DO THIS!! You don’t need meat and cheese to eat a sustainable diet. Get rid of one thing at a time or go all in! Just do what you can and don’t beat yourself up if you mess up. Just get back up tell yourself you can do it and pick up where you left off! You will feel fantastic doing this and you will be healthier! We have one body! Let’s take care of it! You can’t go wrong eating plants! Eat until your full, drink enough water, and be happy! Patience is key when it comes to weight loss. I am not anywhere near where I want to be. I am having to learn this doesn’t happen over night and just learn to love myself and stop caring what others think. It’s never to late to change your life for the better!! ❤
